Was practicing yesterday and found out that the club was much further back in my stance than I thought (and wanted). I thought it was in the middle but not even close to that. I started to set up to the club and not the ball and got aligned better. Found the same thing with my putting too. What do others find helpful getting in the correct position: setting up to the ball or the club?

I would ask you how far apart your feet are when chipping. Typically feet are close together for chipping, which makes ball position sort of narrow choice (pardon the pun). As to set up to ball or club, seems to me that you put the head of the club right behind the ball with right hand holding grip. Then walk in to the setup orient your feet and add left hand to the grip.
Setting up to the ball, to me means to the back of the ball, which is pretty much the same as the lead edge of the club. Finally, you are going to change ball position according to the shot at hand, or maybe not. It all depends.
